These are so easy to make! They are also gluten free, soy free, egg free, dairy free, nut free, vegan, raw and full of flavor. Your kids will not only enjoy eating them, they will have fun helping you make them. There is no baking involved so they are the perfect treat to make on a hot summer day.
Don’t tell anyone they are healthy! Nobody will even notice anyway. My sister refuses to try them for that very reason. But they have been taste tested by many others and I have not received one complaint. Even my husband loves them! I made them for a bridal shower the other day and now I’ve been asked to share the recipe. Here it is. Enjoy!
Raw Vegan Donut Holes
Ingredients:
1 cup of organic pitted medjool dates
1 cup of organic carrot pulp from a juicer or shredded carrot
1/2 cup organic raisins
A small bowl of organic shredded coconut for rolling
Organic cinnamon to taste
Directions: Add dates, carrot pulp, raisins and cinnamon to food processor. There is no need to soak the dates or raisins. I prefer using carrot pulp to shredded carrots because the donuts won’t be as mushy. If you do use a juicer, be sure to drink your carrot juice! Blend in food processor until completely smooth. Scoop out a spoonful of batter in the desired amount and roll between your palms. After you’ve created a smooth ball, place it in bowl of shredded coconut and roll until ball is coated. Repeat. These can be refrigerated or stored in the freezer.
